JOB TITLE:

Meat Laboratory Manager

JOB PURPOSE:

The Department of Animal Science at the University of Wyoming (UW) is seeking candidates for the position of Meat Laboratory Manager. This full-time position will train and supervise 8 to 12 part-time undergraduate student employees to collectively support research, teaching, extension, and meat judging outreach activities. Responsibilities include but are not limited to, stunning and harvest procedures for beef, pork, and lamb; carcass fabrication and meat processing; executing HACCP, SSOP, SOP, and GMP procedures; performing equipment assembly/maintenance and budget management; assisting with fabrication/activities associated with the meat judging program; and assisting with data collection/research projects. An earned B.S. in Animal Science, Meat Science, or a closely related field with concurrent or subsequent training/experience in a meat laboratory/meat processing plant is required. Candidates with an interest in supporting teaching, extension, research, and meat judging activities are preferred.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

The Department of Animal Science at the University of Wyoming (UW) is seeking applications for a full-time Meat Laboratory Manager. It is necessary that the successful candidate have experience with leading stunning and harvest procedures for beef, pork, and lamb; carcass fabrication, meat processing, executing HACCP and sanitation, and equipment assembly/maintenance. The successful candidate will be expected to have prior experience with HAACP systems and state and/or federal inspection processes in a meat facility. The successful candidate will be expected to support activities in research, teaching, extension, and meat judging outreach by leading and training part-time undergraduate students and graduate students in daily meat laboratory operations and to coordinate with Laramie Research and Extension Center Livestock Managers to plan livestock needed for food animal harvest in the meat laboratory facilities. The successful candidate will be expected to contribute to research activity within the UW Meat Laboratory Facilities and in limited research projects that may occur in neighboring inspected facilities. The UW Meat Laboratory Manager will assist instructors with coordinating product availability for teaching labs within the facilities. Preference will be given to candidates who have an interest in supporting teaching, extension, research, and meat judging efforts.

The UW meat laboratory is approximately an 8,000-square-foot state-inspected facility located within the Department of Animal Science, well equipped to support research, teaching, extension, and meat judging program efforts. Typical of most University Meat Laboratories, this facility consists of livestock receiving pens, well-maintained equipment within the harvest floor and fabrication/processed meat production rooms, teaching/processing room, refrigerated coolers for fresh and RTE products, smokehouses, walk-in freezers, and retail sales room. The Department of Animal Science also houses a research/food preparation kitchen and sensory room. The Laramie Research and Extension Center (located approximately five miles off-campus) is available for research, teaching, and extension activities using food animals.

The University of Wyoming campus is in the Rocky Mountain region in the southeastern portion of the state in Laramie, Wyoming. Approximately 11,500 undergraduate and graduate students are enrolled at UW. In addition to promoting academic excellence, outstanding outdoor recreational activities exist near campus, and Denver, Colorado, is located approximately two hours south of Laramie.

REMOTE WORK ELIGIBILITY:

This position provides vital support to campus customers and requires the successful candidate be available to work on campus.

MINIMUM QUALIFICATIONS:

1. Education: Completed Bachelor's degree in Animal Science, Meat Science, or a related area by date of hire.

2. Experience: 1 year experience in hands-on procedures of food animal harvest, meat fabrication, meat processing, and HACCP/processing facility sanitation.

DESIRED QUALIFICATIONS:

1. Ability and interest in supporting faculty and instructors for research, teaching, extension, and judging team activities.

2. HACCP certification and evidence of additional HACCP/Food Safety training.

3. Evidence or ability to demonstrate excellent oral and written communication.

4. Strength in professional recommendations.

5. Personnel management experience.

6. Evidence of training or considerable knowledge of HACCP, GMP, SOP, and SSOP systems under state and/or federal inspection
